You can make ahead and freeze both of these. These recipes are for our family of 6 with about 1 or 2 servings left over (we like leftovers for lunch….), so adjust as necessary! Also feel free to add, subtract, etc and make it your own…I did!!
Beans and Franks Bake:
2 Boxes of Jiffy corn bread mix prepared according to directions and set aside
1 package of bacon, cooked and crumbled
8 hot dogs, sliced lengthwise and then cut into pieces
1 large can baked beans
1 onion, chopped and diced
1 cup ketchup
1/2 cup brown sugar
2 cups mozzarella cheese grated
1. Mix bacon, hot dogs, beans, onion, ketchup and sugar into a bowl, pour into a greased 11X13 dish.
2. Sprinkle cheese on top.
3. Pour cornbread mix over.
4. Bake @ 350 for about 30-45 min or until knife comes out clean
We served it up with cucumbers, tomatoes, baby carrotts and peppers. No complaints from this crew!
Kielbasa Chili
2 packages of Kielbasa, chopped and browned in pan.
2 cans (15 oz) chopped, diced tomatoes
1 can chili with beans
1 can corn (or since we ate the corn earlier this week….oops….we used pinto beans)
Mix and simmer.
Instead of serving over rice, I used millet. Aside from the question of “What IS this?”. It was eaten and enjoyed. A good alternative to rice 😉
