Pumpkin for breakfast

I love fall and I love pumpkin.

imgres

This morning I was not feeling super hot, but I was determined to make a healthy choice for breakfast.  I spied some pumpkin and recalled a recipe for pumpkin protein pancakes.  I went from memory:

pumpkin puree (about a 1/2 cup)

protein powder (1 scoop)

egg whites (I used 3)

cinnamon

I mixed it up.  Heated the pan.  Poured it in.  Made two pancakes.  And….tasted like crap.  Sorry, but it did.   Pumpkin crap.  So I added a little butter and syrup and it was a little better.  Saved the 2nd one for work and ate it with a little nut butter on it for my mid morning snack.   A little better (thanks to Justin’s honey almond butter).  However, in spite of the bad luck in the kitchen,  I’m not giving up on these.

I found two other recipes, one with 4 ingredients (swapping cinnamon for vanilla) and the other many more ingredients (I’ll definitely go with the more is better, personally).  I missed the sweet; however, I will say it was filling and definitely kept me going all morning long!

A week in Review: 7 QT style

Had some time in the shade this morning so I jotted down some thoughts for this week’s Quick Takes with Jen over @ Conversion Diary…I’ll certainly clock in at the bottom of the heap around #75,897,430, but, HEY!  It’s a post, right?

  1. Top crisis of the week (aside from Hubby’s crazy busy work week and my just crazy regular week), my gym.  Best workout I’ve ever had.  Love them so much I put a humongous sticker advertising for them on the back of my truck.  They are cancelling the 6 am class, which leaves me with evening classes.  I’m not a happy camper.  I’ve stomped my feet and protested and they assure me it’s  a”trial period” while they are trying new things.  I’ll give it a month, but I can tell you right now, evening classes don’t work for me long-term.  They just don’t.
  2. Facebook.  I’m back on.  Sort of.  Only on the laptop, not on my phone.  Mainly just to keep in touch with my friends and keep up with a few businesses.  I only checked it about three times this week.  Still need to go in and streamline a few things, eventually.  A good compromise I think.
  3. Our kids are sliding into a cleaner eating lifestyle, of their own accord.  Which is great.  And expensive.  On the upside, with less crap in the house Mama is doing better as well.  Win-win, I guess?
  4. I’ve been reading Into the Wild” by John Krakauer;   a book I snatched off Anne’s reading list @ Modern Mrs. Darcy.  It’s given me a lot of interesting perspective on a character trait that I do NOT have:  Adventure!  Fascinating insight into a tragic story and at the same time a tremendous respect for those who follow their passions/obsessions rather than live a life of “what if” and regret.   I’m almost done, but I can honestly say I highly recommend this book, if nothing else it gives quite the cross-section of American people during Chris/Alex’s journey as well as a view from those who follow their heart regardless of what anyone says.
  5. Downloaded ESPN College Football App.  I love to follow the scores and rankings of college football and I don’t always get to watch, so Yay!!  Super excited!!  Go Noles!!
  6. Date night tonight.  It’s been a week y’all and I’m absolutely looking forward to it.
  7. This weekend’s highlights at Casa E include a Pop Warner football game (over now…we won, but I’m certain I sweated a ridiculous amount of weight off), A 14yo birthday celebration of subs for dinner and homemade cheesecake, chinch bug killer applied to our lawn (creeping over via the neighbor…), Mass, exercise, and somewhere along the way, relaxation, gratitude and joy.

Go enjoy yours!

7 super quickety quick takes

Joining Jen and gangster bloggers for the 7QTS this week!!  Woop Woop!

And so in my usual bon-bon fashion….I am leaving myself with 6 whopping minutes to post this before I need to get ready for work.  Fortunately, I’ve showered, eaten and my lunch is mostly ready.  Ready set GO:

1.  This week I flipped back to old school style planner.  Paper.  Pens.  Pencils.  Still love my iPhone calendar, but I’m a tactile person and I need paper.  My anxiety is decreasing already….this will do until I find something super purty…feel free to leave your suggestions in the combox!

2.  This past weekend (Sunday) counts as the week start correct?  We did a huge ole bed swap…our bunk beds to the neighbors (below right) and my girlfriend’s daughters trundle to our girls (below left) and my girlfriend’s daughter moved a futon into her room for hang/sleep/teen stuff (not posted)….can you say WINX3?!?!?PicMonkey Collage

3.  Back to school is right around the corner…..Our sophomore had orientation and our 6th grader as well.  2 down and 2 to go.  Sweet structure is almost here.  orient4.  I’ve been walking all week while our youngest has cheer practice for about 45 minutes each night (in addition to my morning classes) and am down 3 pounds.  BooYA.  Meh, the weekend is coming, all subject to change!

5.  I’m taking one last road trip before school starts with my girls.  We leave in the a.m. for a fun and packed weekend of friend visiting….hence the 3 pounds are subject to change.  You feel me?

6.  Oh no…..3 minutes over my time.

7.  Have a great weekend!!!

7QTs, Blog Challenge version

It’s Friday people and not ONLY is it my FAVORITE day of the week….seriously….favorite!!!  It’s also 7Quick Takes link up with JEN ANNNNNNNNND day 5 of the blog for 7 days challenge with JEN.  It’s been a good week of blogging, I mean hey, my daily views are up to at least 20 average everyday….don’t hate….it’s also forcing me to sit down and blog…short and sweet or not, the point is to blog!  Here’s my weekly wrapup:

  1. Leaving in a few minutes to get my workout on.  My rear end is still sore from Wednesday so hoping for limited lunges and squats.  **update:  watch what you wish for, we used the TRX and hit the WHOLE bod, especially arms.  My forearms are dead…typing will be a problem today.  OY.
  2. Family rosary last night.  Perfect?  Nay.  Not even close.  Improvement?  Vast.  Continue?  But of course!!
  3. Hubs and our youngest boy are planning on kayaking this evening.  Hoping the afternoon thunderstorms cooperate and allow this quality time activity/male bonding time.
  4. Oldest boy and myself are heading on a little road trip to our old town tomorrow for a surprise birthday party for my dear friend’s 16-year-old son.  I’ve promised him driving time ON THE INTERSTATE, Starbucks, a trip to the Vans store for school shoes and Old Navy to finish up his school shopping for pants.  After all, he IS giving up 2 WHOLE  days of skateboarding…..
  5. I napped before dinner yesterday.  30 minutes.  Rest/nap.  GLORIOUS.  Can’t even tell you the difference it made in my evening.  Uninterrupted recharging after a day at work before starting evening activities  Highly recommend it!
  6. Started re-logging my food for the day.  <smh> the hardest thing about me eating healthy and exercising is the diet portion.  Not BEING on a diet…just PLANNING the meals and LOGGING the intake.  When I am consistent in these things, along with my exercise….success.  Why?  Is?  It?  So?  Hard?????  **on the upside, one of my friends from the gym has been my tracking accountability partner and is down 5 pounds….now my competitive juices are flowing!!
  7. Finished up my 5th Ginger Garrett book in 3 weeks and started Mere Christianity last night.  This should have been linked to Cari and Jessica for “What we are reading Wednesdays” but….better late than never?!

Have a great weekend.  I’m off to sweat!!  Now to shower and get the ball rolling for FRIDAY!!!  Happy Weekend and keep those blogs rolling!

Friday Quickie x 7

Get your mind out of the gutter would you?  I’m just linking up to Jennifer Fulwiler and her amazing round-up of people sharing their top 7 thoughts/ideas/highlights of the week and since I’ve got time this week, I’ll share again.

  1. Home for the 4th day in a row status post tonsillectomy.  Oh, but it’s summer.  And there are children home.  All.  Day.  Long.  Not really, but sort of.  Enough that I wouldn’t call it a week of “quiet time”.  Not so much time to really get a lot “done”.  And yet…..it’s better than being at work!  So I’ll zip it.

  2. I did get a few things done this week.  My desk area is cleared off, bills are paid, laundry is done, sheets are changed and dinners have been cooked AND eaten prior to 7 p.m. more than a few times this week.
  3. The girls and I took my new-to-me sewing machine to my grandmother’s for a refresher lesson (it’s been at least 12 years since I last set that bobbin and thread and needle).  The girls enjoyed a ride in the neighbor’s golf car/cart thing and my grandmother and I figured that baby out.  It is now getting a good maintenance and I am armed, ARMED, I tell you with knowledge.  Pillows and curtains certain to be forthcoming….

My grandmother is the BEST! A true blessing in our family.

  4. My camera is back.  I haven’t used it yet.  I HAVE found some useful websites to explore and experiment with.  And I still have 2 days left of this medi-cation….(haha, I crack myself up!)grid
  5. Paid Sonic a visit.  Milkshakes and a sore tonsil area?  Yes, please.  ‘Twas a hot one and tasty they were.  On a sad note, I now have confirmation that milk is no longer my friend.  <sigh> at least  my hips will be thankful.IMG_4711
  6. Finished Hubby’s Father’s Day project, cards bought AND mailed and plans to visit with my step-dad and siblings on Sunday are cemented.  Days ahead of time.  Do you SEE how much my job gets in my way of getting stuff done????
  7. Made it to Daily Mass on Thursday at the church we first attended when we moved here.  It’s a Basilica now and it is just a stunning church.  My crappy iPhone pics do not do it justice, but I will try to doctor them up and present them in a separate post….it’s worthy.  Here’s a little sneaky peak ‘tho.

**as a bonus, I’ve talked to my BFF every day this week, had a text fest daily with several people without the threat of being fired and I’ve caught up with a few other friends by PHONE this week.  It’s a big week to connect, folks!  Big week!

While I choose my next book, y’all go visit Jen et al!

Blessings!
